Rhubarb is a strange looking plant with a bunch of leaves growing on the root. The stalk is edible .The leaves are not consumed due to the high amount of oxalate which can cause poisoning. The oxalate can spread o the stalk in cold conditions and hence it needs to be stored in warm conditions. The juice of the stalk is consumed. It is usually mixed with some other juice for better taste.
